Room Dessert Ubud Chef Will Goldfarb Dessert Tasting

Dari beberapa fine dining restaurant yang saya pernah coba, mungkin ini menjadi yang paling unik. Kenapa? Karena semua tasting menu yang mereka sajikan adalah dessert. Selain unik yang membuat saya sangat penasaran dengan restaurant ini adalah rekam jejak chef nya yaitu Will Goldfarb. Mungkin beberapa dari kalian sudah mengenal sosok chef satu ini, beliau pernah berkerja dengan Gerard Mulot di Paris, Tetsuya Wakuda di Sydney, dan yang terakhir yang paling menarik perhatian saya yaitu beliau adalah alumni El Bulli. Bagi yang belum mengetahui El Bulli adalah Michelin 3-star restaurant yang terletak di Catalonia Spanyol yang juga telah mendapatkan gelar best restaurant in the world 5 kali berturut-turut tetapi di tahun 2011 mereka memutuskan untuk menutup restaurant nya. Saya kira cukup membahas restaurant legendaris itu, kita balik ke topik utama yaitu Room for Dessert (R4D) ini, saya fikir sudah tidak ada kesempatan untuk mencoba El Bulli maka tidak ada salah nya mencoba salah satu alumninya yang kebetulan sekarang mempunyai restaurant yang unik di daerah Ubud, Bali ini.

Room for Dessert ini awalnya buka di New York, tetapi setelah 5 tahun Will Goldfarb memutuskan untuk menutup R4D di New York dan moving ke Ubud, Bali hingga sekarang. Jika kalian penggemar Netflix, Will Goldfarb juga di feature di series Netflix Chef's Table Season Four (Pastry).

Menu di R4D ada 3 macam yaitu Full Tasting Experience (1.190k), Spiritless Tasting (960k), dan Unpaired Tasting (790k), harga tersebut belum termasuk tax 21%. Sebelum masuk ke menu pertama kalian akan diajak melewati kebun pribadi mereka, dimana kalian akan dijelaskan sedikit tentang tanaman-tanaman yang akan dipakai di dalam menu yang nantinya akan kita nikmati, dan juga bahan-bahan yang digunakan semua berasal dari kebun tersebut. Bahkan ingredient untuk season depan pun sudah sudah mereka persiapkan di lahan tersebut (fyi mereka juga berganti menu setiap 6 bulan sekali).

Saat ini mereka memasuki Season 11 : Strange Bedfellows. Ada 3 sesi dengan masing-masing 7 jenis tasting menu, dan tiap sesi pun ruangan yang sediakan juga berbeda-beda. Sesi yang pertama ini sebagai pembuka yaitu snack.

Kita masuk ke sesi berikutnya yaitu Dessert dan akan berpindah ruangan ke dining room. Tapi ingat ya walaupun berbeda sesi tetap saja menu makanan mereka semuanya dessert. Di sesi ini porsi nya lebih besar dibandingkan sesi pertama maupun terakhir. Ingredient utama yang mereka gunakan adalah markisa, poh, bunga sandat, kopi coklat, panili, daluman, dan kunyit.
